  • 1 15 oz can black beans, thoroughly rinsed
  • 1 Mango diced
  • 1 Jalapeno pepper minced
  • 1 medium zucchini quartered lengthwise & thinly sliced
  • ¼ cup coarsely chopped cilantro
  • 1 tbsp olive oil
  • juice from 1 lime
  • salt and pepper to taste
