Ingredients

  • 2 large Mango peeled, cheeks removed and flesh chopped and pre-chilled, ripe
  • 8 oz cream cheese low fat/fat free, tub
  • ⅓ cup natural sweetener more if needed, depending on the sweetness of your mangoes, or coconut sugar
  • 2 tablespoons honey adjust to suit your tastes
  • 2 teaspoons lemon juice freshly squeezed
  • ¼ cup coconut desiccated/shredded

Instructions

  1. Combine all ingredients into a food processor or blender, and process until smooth and free from lumps.
  2. Pour into 4 serving glasses, and enjoy!
  3. Alternatively, if using fresh mangoes at room temperature (not pre-chilled) leave the mixture to cool in the refrigerator for about an hour or so, until chilled.

  • Serve with strawberries, extra chopped mangoes, greek yoghurt, or extra coconut!
