Mango Coconut Cheesecake Parfaits
Chilled out and so creamy, a perfect end to a meal on a summery, sunny day! Mango Coconut Cheesecake Parfaits are perfectly zingy sweet.
Ingredients
- 2 large Mango peeled, cheeks removed and flesh chopped and pre-chilled, ripe
- 8 oz cream cheese low fat/fat free, tub
- ⅓ cup natural sweetener more if needed, depending on the sweetness of your mangoes, or coconut sugar
- 2 tablespoons honey adjust to suit your tastes
- 2 teaspoons lemon juice freshly squeezed
- ¼ cup coconut desiccated/shredded
Instructions
- Combine all ingredients into a food processor or blender, and process until smooth and free from lumps.
- Pour into 4 serving glasses, and enjoy!
- Alternatively, if using fresh mangoes at room temperature (not pre-chilled) leave the mixture to cool in the refrigerator for about an hour or so, until chilled.
