Ingredients

  • 2.5 cups cucumber (1 large cucumber) peeled, seeded and diced
  • 1 cup mango (1 large mango) diced
  • ½ cup red onion finely chopped
  • 1 habanero chile (optional) chopped
  • 2 Tbsp fresh lime juice
  • 2 Tbsp orange juice
  • Kosher salt to taste
  • 1 fresh jalapeno finely chopped

Instructions

  1. Dice the ripe mangoes and cucumber into uniform pieces. Finely chop the red onion and mince the jalapeño pepper, ensuring to remove the seeds to control the heat level.
  2. Squeeze the lime juice and add the orange juice. Finally, season with salt according to taste.
  3. Refrigerate until ready to use.
