Mango Date Energy Balls combine dried mango, pitted dates, cashew nuts, chia seeds, and a pinch of salt into small, hand-rolled snacks. Ingredients
- 10 dates pitted
- 1 cup dried mango
- 1 cup cashew nuts raw
- 2 tablespoon chia seeds
- 1/4 teaspoon salt
Instructions
- Add the pitted dates and dried mango to a food processor and pulse the mixture for 10 seconds, to break it down. Scrape down the sides, add the remaining ingredients, then blend again until the mixture is fairly smooth, with a slight bit of texture. It will likely start to roll around the food processor when it's blended enough.
- Scoop a ball using a medium cookie scoop and roll it in between your hands. Then, place it on a plate. Continue this process until you've used up all the dough.
Notes
- Store energy balls in an airtight container at room temperature for softer texture or in the fridge for firmness, up to two weeks.
- Freeze with parchment paper separating each ball to avoid sticking.
- If mixture feels sticky, roll balls in shredded coconut or finely chopped nuts before storing.
