Mango Date Energy Balls

Mango Date Energy Balls combine dried mango, pitted dates, cashew nuts, chia seeds, and a pinch of salt into small, hand-rolled snacks. The blend creates chewy and slightly textured balls that provide natural sweetness and nutty richness. These energy balls are convenient for a quick, portable snack and offer a balance of fruit and nuts in each bite.

Description

The Mango Date Energy Balls use dried mango and pitted dates blended until mostly smooth but retaining a bit of texture, giving a chewy consistency. Cashew nuts add creaminess and crunch, while chia seeds contribute nutrition and slight firmness. Rolling the mixture into balls makes them easy to portion and serve.

These energy balls can be stored in an airtight container either at room temperature for a softer texture or refrigerated for a firmer bite, lasting up to two weeks. They can also be frozen with parchment paper between each to prevent sticking. Optional coatings like shredded coconut or chopped nuts help reduce stickiness while rolling.

Ingredients

Servings
  • 10 dates pitted
  • 1 cup dried mango
  • 1 cup cashew nuts raw
  • 2 tablespoon chia seeds
  • 1/4 teaspoon salt

Instructions

  1. Add the pitted dates and dried mango to a food processor and pulse the mixture for 10 seconds, to break it down. Scrape down the sides, add the remaining ingredients, then blend again until the mixture is fairly smooth, with a slight bit of texture. It will likely start to roll around the food processor when it's blended enough.
  2. Scoop a ball using a medium cookie scoop and roll it in between your hands. Then, place it on a plate. Continue this process until you've used up all the dough.

Notes

  • Store energy balls in an airtight container at room temperature for softer texture or in the fridge for firmness, up to two weeks.
  • Freeze with parchment paper separating each ball to avoid sticking.
  • If mixture feels sticky, roll balls in shredded coconut or finely chopped nuts before storing.
