Ingredients

  • 1 cup Bob's Red Mill Red Quinoa
  • 1 cup Mango chopped
  • 1 cup shelled edamame
  • 2 stalks green onion chopped
  • 1/2 cup red bell pepper chopped
  • 1/2 cup unsweetened flaked coconut
  • 1/4 cup raisins
  • 1/3 cup almonds roasted and chopped
  • 6 leaves fresh basil chopped
  • sea salt to taste

Instructions

  1. Prepare quinoa according to package instructions. Allow quinoa to cool completely.
  2. Add all ingredients for the quinoa salad to a mixing bowl and toss to combine. Sprinkle in sea salt to taste. Taste the salad for flavor and if desired, add some olive oil and lemon juice to boost the flavor. Serve alongside your favorite main entree or add to a green salad.
