Mango Juice Recipe (Green Mango Juice)

Ingredients

  • 20 Mango see notes
  • 2 lemon see notes, plural
  • 2 teaspoon chaat masala (see notes)
  • 8 cups water
Simple Syrup
  • 4 cups sugar
  • 2 cups water
Glass Rim
  • ½ lemon
  • 2 teaspoon tajin seasoning
  • 4 teaspoon sugar

Instructions

  1. Preheat the oven to 350° F.
  2. Place the mangoes on a baking sheet or roasting pan and bake for 20 minutes.
  3. Cool the mangoes to room temperature and then peel and remove the pulp.
  4. Squeeze the lemon juice on the mango pulp.
  5. Puree this mixture in a food processor, blender or using an immersion blender.
  6. Prepare the simple syrup. (see notes)
  7. Blend the pulp with the simple syrup.
  8. Mix ½ cup pulp with water, ice, and ½ teaspoon chaat masala and serve in a rimmed glass. (see notes)
  9. Freeze the remaining mango juice concentrate for future use.

  • Champagne or Ataulfo mangoes provide optimal sweetness and smooth texture for this juice.
  • Lemon juice brightens flavor and inhibits discoloration in the mango pulp.
  • Chaat masala adds a tangy, savory note popular in South Asian beverages and snacks.
