Mango Juice Recipe (Green Mango Juice)

This Mango Juice Recipe produces a refreshing green mango juice concentrate by roasting mangoes before blending with lemon juice, chaat masala, and simple syrup. The roasting intensifies the mango's natural sweetness and flavor complexity. The juice can be diluted with water and served with ice, sprinkled with chaat masala, and is perfect for a flavorful and cooling beverage. The recipe includes rim seasoning for glasses, adding a tangy and spicy touch.

Description

The Mango Juice Recipe begins with roasting whole mangoes to enhance their sweetness and peel easily. After cooling, the roasted mango pulp is combined with freshly squeezed lemon juice to prevent oxidation and add brightness. The pulp is then pureed and mixed with a prepared simple syrup, which helps balance tartness and adds sweetness while acting as a preservative.

The juice concentrate is diluted with water and ice per serving, seasoned with chaat masala—a popular South Asian spice blend containing cumin, dry mango powder, and black salt—which introduces a savory and tangy complexity. The glass rimmed with a mixture of lemon, tajin seasoning, and sugar adds a complementary flavor dimension, making each sip vibrant and balanced.

This recipe is adaptable by adjusting sweetness and dilution to taste. The concentrate can be frozen for later use and thawed when needed, allowing for convenient preparation of fresh-tasting mango juice. The use of champagne or Ataulfo mangoes is recommended for their smooth texture and sweetness.

Lemon juice and sugar help preserve color and freshness, while chaat masala contributes a distinctive regional flavor. The recipe yields enough concentrate for multiple servings and customizable dilution levels.
