Mango Pico de Gallo
A tropical twist to the traditional pico de gallo. Diced mango adds a delicious sweet flavor that adds delicious flavor with the jalapeños and diced tomatoes. Enjoy as an appetizer or add to recipes as a condiment.

Ingredients
- 1 pound roma tomatoes 2 cups, diced & seeded
- 2-3 mangos 2 cups, peeled & diced
- 1 medium red onion 1 cup, diced
- 1-2 jalapeños diced
- 1 lime juiced
- 1 bunch cilantro chopped
- 1/2 teaspoon kosher salt
Instructions
- Dice tomatoes (remove seeds), mangos, onion, and jalapeños. Chop cilantro.
- Place tomatoes, mangos, onion and jalapeños in a medium serving bowl. Fold in cilantro.
- Add lime juice. and season with salt. Mix.
- Enjoy with tortilla chips or serve with tacos, eggs, fish or shredded beef.

Notes
- For jalapeños, slice in half. Cut off stem and scrape out the seeds with a knife. Note that the heat is in the white membrane. Remove or leave according to your preference.
