Mango PIneapple Salsa

Sweet and tart with a little kick, Mango Pineapple Salsa is a tasty appetizer or side for meat, fish or poultry.

Ingredients

Salsa
  • 1 Mango peeled, seeded and chopped, large
  • ½ pineapple chopped
  • 1/4 cup onion about 1 small red onion, red, chopped
  • ½ cup red bell pepper or banana peppers or mini peppers, chopped
  • 1 avocado skin and pit removed, chopped
  • 1/4 cup cilantro about 1/2 a bunch, chopped
  • 1 jalapeno pepper optional (the cayenne adds plenty of heat), minced, seeds removed
  • salt optional, to taste
Dressing
  • 1 lime juice only
  • ¼ - ½ teaspoon cayenne pepper or 1 finely mined jalepano (with seeds and ribs removed) to taste

Instructions

    Cup of Yum
  1. Chop salsa ingredients as needed.
  2. Combine in a medium bowl.
  3. Juice lime. Toss the lime and cayenne with the salsa ingredients.
  4. Taste and adjust cayenne and salt if needed.
  5. Enjoy.
