- 2 cups Mango finely chopped
- 1/2 red onion finely chopped
- 2 tablespoons roasted red pepper finely chopped
- 1 teaspoon cilantro finely minced
- 1 tablespoon fresh lime juice
- 1/2 teaspoon lime zest
- dash coarse kosher salt

- In a medium bowl, toss together the mango, red onion, roasted red pepper, cilantro, lime juice, lime zest and salt.
