Ingredients

  • 2 Mango peeled, seeded and finely diced, small
  • 1/4 cup red bell pepper diced
  • 1/4 cup red onion diced
  • 2 small jalapeños seeded and membrane removed, finely chopped
  • 1/4 cup cilantro freshly snipped
  • 2 tablespoons mint freshly snipped, leaves
  • 1 lime (juice only)
  • salt to taste

Instructions

  1. In a medium sized bowl, combine the diced mango, red bell pepper, red onion and the jalapeños.
  2. Add the finely chopped cilantro and mint and mix.
  3. Add the juice of the lime along with the salt and mix well. Taste and adjust the salt accordingly.
  4. Cover and refrigerate at least 2 hours before serving to develop the flavors.
  5. Refrigerate leftovers and use within 3 days.

Notes

  • *Adjust the amount of jalapeños according to how spicy you'd like the salsa.
