Maple Candied Bacon Bread Pudding Muffins

Maple candied bacon adds a scrumptious sweet and salty flavor to these delicious bread pudding muffins, easy to make in under an hour!

Ingredients

  • 10 bacon slices
  • ¾ cup maple syrup divided
  • 2 eggs
  • 1 ½ cups milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 12 hawaiian rolls quartered

Instructions

  1. Preheat the oven to 400°F.
  2. Place the bacon on a wire rack on top of a foil-lined baking sheet, drizzle ¼ cup of maple syrup across the slices of bacon.
  3. Place in the oven to cook for 12 minutes.
  4. Remove from the oven, flip the bacon and drizzle another ¼ cup of maple syrup across the slices of bacon.
  5. Place back into the oven to cook for another 12 minutes.
  6. Remove the bacon from the oven, place on a cutting board and set aside.
  7. Turn the heat on the oven down to 375°F.
  8. In a large bowl, whisk the eggs, milk, vanilla, cinnamon and remaining ¼ cup maple syrup together. Add the quartered hawaiian rolls and toss to coat.
  9. Chop the bacon.
  10. Add ¾ of the bacon to the bread pudding and toss to combine.
  11. Place the bread pudding in silicone or paper muffin liners in a muffin tin.
  12. Place in the oven and bake for 25-30 minutes.
  13. Remove from the oven and top with the remaining ¼ cup of chopped candied bacon.
