Maple Candied Bacon Bread Pudding Muffins

Ingredients
- 10 bacon slices
- ¾ cup maple syrup divided
- 2 eggs
- 1 ½ cups milk
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 12 hawaiian rolls quartered
Instructions
- Preheat the oven to 400°F.
- Place the bacon on a wire rack on top of a foil-lined baking sheet, drizzle ¼ cup of maple syrup across the slices of bacon.
- Place in the oven to cook for 12 minutes.
- Remove from the oven, flip the bacon and drizzle another ¼ cup of maple syrup across the slices of bacon.
- Place back into the oven to cook for another 12 minutes.
- Remove the bacon from the oven, place on a cutting board and set aside.
- Turn the heat on the oven down to 375°F.
- In a large bowl, whisk the eggs, milk, vanilla, cinnamon and remaining ¼ cup maple syrup together. Add the quartered hawaiian rolls and toss to coat.
- Chop the bacon.
- Add ¾ of the bacon to the bread pudding and toss to combine.
- Place the bread pudding in silicone or paper muffin liners in a muffin tin.
- Place in the oven and bake for 25-30 minutes.
- Remove from the oven and top with the remaining ¼ cup of chopped candied bacon.
