Maple Cinnamon Roasted Butternut Squash

Ingredients

  • 1 butternut squash approx. 3-4 pounds, large
  • 1 TBSP avocado oil or olive oil
  • 2 TBSP pure maple syrup
  • ½ tsp ground cinnamon
  • 1/4-1/2 tsp salt as desired, sea salt

Instructions

  1. Pre-heat oven to 400 degrees F.
  2. Peel and chop squash into 1 inch cubes.
  3. Lightly drizzle/spritz a baking sheet with your favorite healthy oil or line with parchment paper.
  4. Add cubed squash to the sheet along with a TBSP of oil and toss to coat.
  5. Season with sea salt and cinnamon and drizzle with maple syrup.
  6. Roast at 400 F for 30 minutes on the center rack, or until ideal tenderness is reached.
  7. Pair it with your favorite main course and dive in while it's hot!
