Maple Glazed Apple Oatmeal Cookies

These oatmeal cookies are packed with shredded apples, warm spices and topped with a simple maple glaze. Perfect little bites and the cookies are so soft and chewy!

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 1 large apple peeled and shredded (See Note 1)
  • 1 3/4 cup rolled oats
Glaze
  • 3/4 cup powdered sugar
  • 1 tbsp maple syrup
  • 1 tbsp milk

Instructions

  1. Preheat oven to 350°F.
  2. In a small bowl combine flour, spices and salt.
  3. Peel and shred apple with cheese grater. Squeeze excess juice and drink or save for later use. Set aside.
  4. In a large bowl beat the butter and sugars until smooth. Add the egg and vanilla. Stir in the flour and spice mixture, oats and apples. Using a two tablespoon scoop place dough on cookie sheets lined with parchment or silicon baking sheet.
  5. Bake for 10-12 minutes. Allow to cool on the sheet for 5 minutes and transfer to a rack to cool.
  6. In a small bowl add powdered sugar, maple syrup and milk. Carefully stir to incorporate and drizzle over cookies.

  •  
  • I use Honey Crisp apple, feel free to use Granny Smith or other firm apple.
