Ingredients

  • 1 1/2 lbs salmon cut into 4 to 6 fillets
  • 2 Tbsp avocado oil
  • 1 tsp dried paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 Tbsp coconut sugar
  • 3 Tbsp pure maple syrup

  1. Preheat oven to 350 degrees F and pour a small amount of avocado oil (or high-temp cooking oil of choice) in the bottom of a casserole dish (or spray with cooking oil). Spread it around with your fingers so that the salmon doesn’t stick to the casserole dish while baking.
  2. Place the salmon fillets in the casserole dish and brush with avocado oil. Sprinkle with paprika, sea salt, garlic powder, onion powder, dried oregano, and coconut sugar.
  3. Bake on the center rack of the oven for 15 to 20 minutes (depending on the thickness of the fish).
  4. Remove the salmon from the oven and change the oven setting to high broil.
  5. Brush the fish with pure maple syrup (or pour it over the fish) and place on the second to the top rack under the broiler. Broil 3 to 5 minutes, until salmon is crispy and glazed.
  6. Spoon any pure maple syrup from the bottom of the dish over the salmon and serve with choice of side dishes.

Notes

  • Omit the garlic powder and onion powder if you follow a low-FODMAP diet.
