Ingredients

  • 6 medium sweet potatoes
  • ½ cup butter softened
  • ½ cup maple syrup
  • ½ cup milk more as needed
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • brown sugar optional

Instructions

    Cup of Yum
  1. Bring a large pot of water to a boil. Peel and dice the potatoes and add to the boiling water. Boil for 20 minutes or until potatoes are tender and easily pierced with a fork.
  2. Drain the water from the potatoes and transfer to a bowl.
  3. Add the butter and maple syrup to the hot potatoes and start mashing. Slowly drizzle in the milk, as needed, to reach the desired consistency. Potatoes should be smooth and creamy.
  4. Stir in the cinnamon, vanilla, and salt. Sprinkle with brown sugar before serving, if desired.

Notes

  • This recipe is best with pure maple syrup, not pancake syrup. Honey or brown sugar may be substituted for the maple syrup.
  • Sprinkling brown sugar over the top is optional, but adds a touch more sweetness that my kids love.
