Ingredients

  • 1 ½ pounds butternut squash cubed
  • 2 tablespoons sugar-free maple syrup divided
  • 1 tablespoon olive oil
  • 1 teaspoon fresh Rosemary chopped
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • Optional: toasted pecans

Instructions

  1. Preheat oven to 400°F.
  2. Add the butternut squash to a large mixing bowl.
  3. Pour the olive oil, cinnamon, rosemary, salt, pepper and half the maple syrup over the top.
  4. Toss to combine, making sure each piece is well coated.
  5. Pour onto a baking sheet lined with parchment paper or a Silpat. spreading out into an even layer.
  6. Bake for 25 minutes, then remove from the oven. Add the remaining maple syrup and toss, increase the temperature to 425°F and bake for 10 more minute or until cooked through and slightly caramelized. Top with the (optional) chopped toasted pecans and serve
