Maple Roasted Sweet Potatoes

Oven Roasted Sweet Potatoes with Maple Glaze are coated in a tasty maple syrup mixture and roasted until tender, caramelized and slightly golden. This side dish is the perfect addition to your weekly meals, meal-prep, Thanksgiving dinner and Christmas dinner. Gluten-free, vegetarian and vegan.

Ingredients

  • 2 large sweet potatoes
  • 1/4 cup maple syrup
  • 2 tablespoons brown sugar
  • 1/4 teaspoon cinnamon
  • 2 tablespoons olive oil
  • salt to taste

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil for easy clean up.
  2. Rinse, peel and cut the sweet potatoes into 3/4 inch cubes.
  3. In a small bowl, mix the maple syrup, brown sugar, cinnamon and olive oil.
  4. Spread the sweet potatoes in a single layer on the baking sheet and pour the maple syrup mixture over them. Season lightly with salt and toss to coat.
  5. Roast in the oven, for 30 to 40 minutes or until tender and the edges are lightly brown, turning them with a spatula once during the cooking process.
  6. Remove from the oven and season with salt to taste. Serve warm.

Notes

  • Pick red or orange sweet potatoes as they are sweeter, creamier and less fibrous that other varieties.
  • Use a baking sheet large enough to accommodate the sweet potatoes in a single layer.
  • Although this recipe calls for peeled sweet potatoes, their skin is edible so you can leave it on if you prefer.
  • Cut the pieces roughly the same size for even cooking.
  • Feel free to use other spices such as cayenne pepper.
  • Leftovers can be stored in the refrigerator in an airtight container for about 3 days.
