  • 1 pound salmon fillets cut into 2-4 pieces
  • 2 teaspoons olive oil
  • ¼ cup soy low-sodium soy sauce or gluten free tamari
  • ¼ cup pure maple syrup
  • 3 cloves garlic minced
  • 2 teaspoons ginger paste or fresh ginger
  • fresh scallions optional topping

Instructions

    Cup of Yum
  1. Preheat oven to 425 degrees F
  2. Add oil to a cast iron pan or baking dish and coat the bottom of the pan
  3. Place salmon fillets in the pan and bake for 15 minutes.
  4. While the salmon is baking, add the soy sauce, maple syrup, garlic, and ginger to a small saucepan.
  5. Bring to a low boil and simmer over medium high, stirring often until it thickens into a glaze.
  6. Reserve a few tablespoons of the glaze to drizzle over top once served.
  7. Remove the salmon from oven and pour the remaining glaze over top.
  8. Let the salmon rest 5-10 minutes before serving.
  9. Serve over rice with a favorite vegetable.

Notes

  • If using smaller pieces or thinner cuts of salmon (like sockeye), the bake time will be quicker.
  • Double the sauce ingredients if cooking more than a pound of salmon.
  • Want a spicier version, add 2 teaspoons of sriracha sauce or ⅛ teaspoon of red pepper flakes to the glaze ingredients.
  • For a more intense flavor, marinade the salmon fillets in the glaze ingredients for an hour before baking and then cook down the marinade into the glaze.
  • Store any leftovers in an airtight container for 1-2 days.
