Marinated Chicken Kabobs

This recipe for Marinated Chicken Kabobs involves boneless, skinless chicken thighs marinated in a mix of honey, brown sugar, soy sauce, garlic, sriracha, lime juice and zest, and ginger. The marinade imparts a sweet, tangy, and slightly spicy flavor that infuses the meat. After marinating, the chicken pieces are grilled on skewers for a smoky finish with caramelized edges. The method highlights the forgiving nature of chicken thighs for grilling and gives options to customize the heat level.

Ingredients

  • 2 lbs chicken thighs boneless, skinless
  • ⅓ cup honey plus 2 TB more
  • ¼ cup brown sugar packed
  • ¼ cup soy sauce
  • 8 cloves garlic minced
  • 2 TB sriracha or more, depending on taste
  • lime zest of 1
  • 3 TB lime juice freshly squeezed
  • 1 tsp ginger ground or freshly grated
  • ¼ tsp table salt
  • oil freshly chopped cilantro for garnish, for cooking

Instructions

    Cup of Yum
  1. Thoroughly dry chicken with paper towel and pierce with fork throughout. Cut into 1-inch pieces; set aside.
  2. In a large bowl, whisk together all remaining ingredients into a well-combined marinade. Reserve 1/4 cup of the marinade for later. Add chicken pieces to the bowl of marinade, turning to coat well. Marinade 2-3 hours, up to overnight, turning occasionally to re-coat if necessary.
  3. Thread marinated chicken onto pre-soaked skewers, discarding any used marinade. Coat grill with oil, heating over medium-high heat until hot. Place skewers on grill and cook until nice grill marks appear and center is no longer pink, approx. 2-3 min/side, basting occasionally with your 1/4 cup of reserved marinade.
  4. Serve immediately with freshly chopped cilantro or parsley for garnish, if desired.

Notes

  • Boneless, skinless chicken thighs yield tender results, but chicken breasts can be used; watch the cooking time to avoid drying out.
  • Use tamari sauce instead of soy sauce for a gluten-free option.
  • Serve these kabobs with cilantro lime rice or coconut rice to complement the flavors.
  • Marinate the chicken for at least 2 hours and up to overnight, turning occasionally to ensure even coating.
