Marinated Chicken Kabobs
Description
Marinated Chicken Kabobs are made from boneless, skinless chicken thighs cut into one-inch pieces and marinated in a flavorful blend of honey, brown sugar, soy sauce, minced garlic, sriracha, lime zest and juice, ground or fresh ginger, and salt. The marinade balances sweetness with acidity and heat, which helps tenderize the chicken and build a sticky glaze. The chicken is marinated for 2 to 3 hours or up to overnight, allowing deep flavor absorption and tender texture.
Before cooking, the chicken is threaded onto skewers that have been soaked in water to prevent burning. Grilling is performed over medium-high heat until grill marks develop and the chicken reaches an appropriate internal temperature, about 2 to 3 minutes per side. Basting with reserved marinade during grilling reinforces the moisture and flavor coating. Finally, fresh chopped cilantro or parsley is used as garnish to add herbal brightness.
This preparation suits outdoor grilling occasions or stovetop grill pans and pairs well with side dishes like cilantro lime rice or coconut rice. The recipe recommends using chicken thighs for juiciness, but chicken breasts can substitute, noting they cook faster and can dry out if overcooked. For gluten-free adaptations, tamari can replace soy sauce.
Ingredients
- 2 lbs chicken thighs boneless, skinless
- ⅓ cup honey plus 2 TB more
- ¼ cup brown sugar packed
- ¼ cup soy sauce
- 8 cloves garlic minced
- 2 TB sriracha or more, depending on taste
- lime zest of 1
- 3 TB lime juice freshly squeezed
- 1 tsp ginger ground or freshly grated
- ¼ tsp table salt
- oil freshly chopped cilantro for garnish, for cooking
Instructions
- Thoroughly dry chicken with paper towel and pierce with fork throughout. Cut into 1-inch pieces; set aside.
- In a large bowl, whisk together all remaining ingredients into a well-combined marinade. Reserve 1/4 cup of the marinade for later. Add chicken pieces to the bowl of marinade, turning to coat well. Marinade 2-3 hours, up to overnight, turning occasionally to re-coat if necessary.
- Thread marinated chicken onto pre-soaked skewers, discarding any used marinade. Coat grill with oil, heating over medium-high heat until hot. Place skewers on grill and cook until nice grill marks appear and center is no longer pink, approx. 2-3 min/side, basting occasionally with your 1/4 cup of reserved marinade.
- Serve immediately with freshly chopped cilantro or parsley for garnish, if desired.
Notes
- Boneless, skinless chicken thighs yield tender results, but chicken breasts can be used; watch the cooking time to avoid drying out.
- Use tamari sauce instead of soy sauce for a gluten-free option.
- Serve these kabobs with cilantro lime rice or coconut rice to complement the flavors.
- Marinate the chicken for at least 2 hours and up to overnight, turning occasionally to ensure even coating.
