Marinated Grape Tomatoes with Shallot and Garlic

Ingredients

  • 1 pint mixed grape tomatoes
  • 1 small shallot sliced thinly into rings
  • 1 small clove of garlic sliced thinly into slivers
  • ¼ cup seasoned rice vinegar
  • 2 tbsp olive oil
  • Pinch of Crushed Red Pepper Flakes to taste
  • Sea Salt and Freshly Cracked Pepper to taste

Instructions

  1. Combine the sliced tomatoes, shallot rings, and garlic slivers into a serving bowl.
  2. Add the seasoned rice vinegar, olive oil, and crushed red pepper flakes.
  3. Season with sea salt and freshly cracked pepper, to taste.
  4. Set aside for 30-60 minutes to allow flavors to mingle before serving. Enjoy.
