Marinated Mushrooms

Marinated mushrooms have always been a hit as an appetizer! This recipe uses fresh mushrooms but if you want to go full retro, used drained canned mushrooms, just like Grandma did!

Ingredients

  • 1 pound fresh small button mushrooms cleaned and stems trimmed
  • 1/3 cup red wine vinegar
  • 1/3 cup olive oil
  • 1 small white onion sliced very thinly
  • 1/2 teaspoon onion salt
  • 1/4 teaspoon celery salt
  • 1/4 teaspoon marjoram
  • 1 clove garlic minced
  • 2 tablespoons parsley flakes
  • 1 tablespoon brown sugar

Instructions

  1. Bring a medium pot of water to a boil. Place the mushrooms into the water and cook until tender, around 6-7 minutes. Remove and drain well.
  2. Whisk together the marinade ingredients. Taste-test, and add salt and pepper if desired.
  3. Marinate the mushrooms in the mixture in a closed container in the fridge for at least 4 hours, stirring the mixture to coat every hour or so.. Keep in the fridge for up to 5 days.
