Marinated Tomatoes

Marinated Tomatoes brings ripe Roma tomatoes together with thinly sliced onions and a garlic paste, tossed in olive oil, vinegar, lemon juice, and Italian seasoning. The mix sits at room temperature to develop bright, tangy flavors, making it a versatile condiment or salad topping. Fresh basil can be added for herbal notes before serving.

Ingredients

  • 2-3 Roma tomatoes ripe
  • ¼ white onion sliced thin
  • 1 clove garlic
  • ⅛ tsp salt sea salt
  • ¼ cup extra virgin olive oil quality
  • 1 TBSP red wine vinegar or white wine vinegar
  • 1 lemon , juiced
  • ½ tsp Italian seasoning
  • balsamic vinegar start with a little then add extra to taste, for drizzling
  • salt to taste
  • black pepper to taste
  • basil optional + delicoius!, fresh, for topping

Instructions

  1. Cut Roma/plum tomatoes in half lengthwise then slice each half horizontally. Cut into wedges. Combine with sliced onion.
  2. Using the flat side of your knife, smash a clove of peeled garlic and mince into a paste. Season with a pinch of salt and add to a bowl with your veggies.
  3. Add olive oil, vinegar, lemon juice, Italian seasoning, freshly cracked black pepper, and fresh basil if you have some handy! Mix to coat the tomatoes and allow to sit at room temperature for 30-60 minutes, stirring occasionally. The longer it sits the more intense the flavors will be.
  4. Enjoy at room temperature via your favorite method (see notes for ideas) after adding/adjusting salt and pepper to taste.

Notes

  • Store leftover marinated tomatoes in the fridge and consume within 1-2 days for best freshness.
  • Before eating refrigerated leftovers, bring them to room temperature to restore the full flavor profile.
  • This preparation works well as a salad dressing, bruschetta topping, or on avocado toast, and pairs nicely with mozzarella in Caprese salads.
