Marinated Tomatoes
Description
This Marinated Tomatoes recipe uses ripe Roma tomatoes cut into wedges alongside thin slices of white onion. Garlic is crushed into a paste to evenly distribute its flavor. The vegetables are combined with extra virgin olive oil, red wine vinegar, fresh lemon juice, and Italian seasoning. Salt and freshly cracked black pepper season the mixture, and optional fresh basil adds a bright, herbal element.
The tomatoes marinate at room temperature from 30 minutes to an hour, allowing the acidity from the vinegar and lemon to mellow and infuse the tomatoes and onions. The result is a salad topping with lively acidity and gentle sweetness from the tomatoes, balanced with a mild bite from onions and garlic.
Marinated Tomatoes can be served at room temperature as a salad topping combined with leafy greens and homemade croutons, as a bruschetta topping on toasted bread, or on avocado toast. It also complements Caprese salads when paired with mozzarella and basil. Leftovers keep for 1-2 days refrigerated and should be brought back to room temperature before serving to regain flavor intensity.

- ¼ white onion sliced thin
- 1 clove garlic
- ⅛ tsp salt sea salt
- ¼ cup extra virgin olive oil quality
