Marinated Tomatoes

Ingredients

  • 600 grams Grape or Cherry Tomatoes halved
  • 1 shallot finely minced
  • 1 handful basil ribboned
  • salt and pepper to taste
Marinade
  • 2 cloves garlic
  • 2 tbsp lemon juice
  • 1 tbsp rice vinegar
  • 3 tbsp olive oil

Instructions

  1. Add the tomatoes, shallots, and basil to a bowl.
  2. In a measuring cup or bowl, combine the garlic, lemon juice, rice vinegar, and olive oil.
  3. Pour the marinade over top and toss to combine. Add a pinch of salt and pepper to taste.
  4. Cover the bowl and marinate the tomatoes at room temperature for at least 30 minutes before enjoying. Transfer to the fridge if you want to marinate it for longer.
