Ingredients
- 600 grams Grape or Cherry Tomatoes halved
- 1 shallot finely minced
- 1 handful basil ribboned
- salt and pepper to taste
Marinade
- 2 cloves garlic
- 2 tbsp lemon juice
- 1 tbsp rice vinegar
- 3 tbsp olive oil

Instructions
- Add the tomatoes, shallots, and basil to a bowl.
- In a measuring cup or bowl, combine the garlic, lemon juice, rice vinegar, and olive oil.
- Pour the marinade over top and toss to combine. Add a pinch of salt and pepper to taste.
- Cover the bowl and marinate the tomatoes at room temperature for at least 30 minutes before enjoying. Transfer to the fridge if you want to marinate it for longer.
