Marinated Tomatoes with Mozzarella

Ingredients

  • 4-5 tomatoes sliced thickly
  • ¼ cup olive oil
  • 2-3 tbsp balsamic vinegar to taste
  • 1 tbsp shallot finely diced
  • 1 tbsp fresh parsley finely diced
  • 1 tbsp fresh basil finely diced
  • 1 tbsp fresh oregano finely diced
  • ½ tsp honey more if desired
  • Sea Salt and Freshly Cracked Pepper to taste
  • mozzarella cut into bits

Instructions

  1. Cut the tomatoes into thick slices and arrange them in a single layer in a large shallow dish.
  2. Combine the olive oil, balsamic vinegar, shallot, garlic, parsley, basil, oregano, and honey together in a bowl; whisk until well combined. Season with sea salt and freshly cracked pepper, to taste.
  3. Pour the vinaigrette evenly over the tomato slices.
  4. Cover with plastic wrap and set aside on the counter for 1-2 hours.
  5. Serve with mozzarella bits on top and season with a bit more freshly cracked pepper, to taste. Enjoy.
