Ingredients
- 4-5 tomatoes sliced thickly
- ¼ cup olive oil
- 2-3 tbsp balsamic vinegar to taste
- 1 tbsp shallot finely diced
- 1 tbsp fresh parsley finely diced
- 1 tbsp fresh basil finely diced
- 1 tbsp fresh oregano finely diced
- ½ tsp honey more if desired
- Sea Salt and Freshly Cracked Pepper to taste
- mozzarella cut into bits
Instructions
- Cut the tomatoes into thick slices and arrange them in a single layer in a large shallow dish.
- Combine the olive oil, balsamic vinegar, shallot, garlic, parsley, basil, oregano, and honey together in a bowl; whisk until well combined. Season with sea salt and freshly cracked pepper, to taste.
- Pour the vinaigrette evenly over the tomato slices.
- Cover with plastic wrap and set aside on the counter for 1-2 hours.
- Serve with mozzarella bits on top and season with a bit more freshly cracked pepper, to taste. Enjoy.
