Marinated White Beans
Marinated White Beans bring together canned white beans with a fresh mix of herbs including parsley, cilantro, basil, dill, tarragon, and mint, along with roasted red peppers, shallots, and garlic. The mixture is dressed with extra-virgin olive oil and brightened by lemon zest and juice, creating a fresh, herbaceous, and slightly spicy salad that intensifies after marinating. This dish is a flavorful, make-ahead option for a side or light meal.
