Ingredients

  • 2 (15-ounce cans) White beans drained and rinsed
  • ½ cup parsley fresh, chopped herbs
  • ½ cup cilantro
  • ½ cup basil
  • ½ cup dill
  • ½ cup tarragon
  • ½ cup mint
  • 2 red bell pepper finely diced, roasted
  • ⅓ cup shallot finely diced
  • 2 garlic minced, cloves
  • ½ cup extra-virgin olive oil
  • 1 lemon zested and juiced (about 3 tablespoons juice and 1 teaspoon zest)
  • ½ teaspoon kosher salt
  • ¼ teaspoon red pepper flakes
  • black pepper to taste, ground

Instructions

  1. Mix together. In a large mixing bowl, stir together the white beans, herbs, red peppers, shallot, garlic, oil, lemon juice, salt, red pepper flakes, and black pepper.
  2. Marinate. Cover the bowl and refrigerate for at least 2 hours or preferably overnight. Stir again before serving or store in a sealed container in the fridge.

Notes

  • Store the marinated white beans in the refrigerator; they remain fresh for 3 to 4 days.
  • Leftover roasted red peppers can be used in recipes like roasted red pepper hummus or tahini sauce.
