Description
This recipe combines rinsed white beans with a flavorful medley of finely chopped fresh herbs such as parsley, cilantro, basil, dill, tarragon, and mint. After mixing, the bean salad is refrigerated for at least two hours or overnight to let the flavors meld and the beans absorb the bright, herbal dressing. The texture remains tender from the beans but with contrast from the diced peppers and shallots. The lemon juice gives freshness and acidity, balanced by the warmth of the red pepper flakes.

- 2 (15-ounce cans) White beans drained and rinsed
- ½ cup parsley fresh, chopped herbs
- ½ cup cilantro
- ½ cup basil
- ½ cup dill
- ½ cup tarragon
- ½ cup mint
- 2 red bell pepper finely diced, roasted
- ⅓ cup shallot finely diced
- 2 garlic minced, cloves
- ½ cup extra-virgin olive oil
- 1 lemon zested and juiced (about 3 tablespoons juice and 1 teaspoon zest)
- ½ teaspoon kosher salt
- ¼ teaspoon red pepper flakes
- black pepper to taste, ground
Instructions
- Mix together. In a large mixing bowl, stir together the white beans, herbs, red peppers, shallot, garlic, oil, lemon juice, salt, red pepper flakes, and black pepper.
- Marinate. Cover the bowl and refrigerate for at least 2 hours or preferably overnight. Stir again before serving or store in a sealed container in the fridge.
