Marinated White Beans

Marinated White Beans bring together canned white beans with a fresh mix of herbs including parsley, cilantro, basil, dill, tarragon, and mint, along with roasted red peppers, shallots, and garlic. The mixture is dressed with extra-virgin olive oil and brightened by lemon zest and juice, creating a fresh, herbaceous, and slightly spicy salad that intensifies after marinating. This dish is a flavorful, make-ahead option for a side or light meal.

Description

This recipe combines rinsed white beans with a flavorful medley of finely chopped fresh herbs such as parsley, cilantro, basil, dill, tarragon, and mint. Roasted red bell peppers and shallots provide sweetness and crunch, while minced garlic adds pungency. The dressing is a simple blend of extra-virgin olive oil, fresh lemon juice and zest, kosher salt, red pepper flakes, and freshly ground black pepper.

After mixing, the bean salad is refrigerated for at least two hours or overnight to let the flavors meld and the beans absorb the bright, herbal dressing. The texture remains tender from the beans but with contrast from the diced peppers and shallots. The lemon juice gives freshness and acidity, balanced by the warmth of the red pepper flakes.

This marinated bean dish is versatile and can be served on its own, alongside grilled meats, or as part of a larger vegetarian spread. It stores well in the refrigerator for several days, making it a convenient prepared salad.

The beans keep fresh for 3 to 4 days refrigerated. Leftover roasted red peppers from your jar can be repurposed in other recipes such as hummus or tahini sauce to minimize waste.
