Marqat Fasolia

Fasolia, marqat fasolia or fassoulia is one of the most popular dishes of Iraqi cuisine made from white beans and mutton or lamb.

Ingredients

  • 14 oz. dry white beans (previously soaked)
  • 1½ lb lamb shoulder cut into cubes
  • 4 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 4 tomatoes , peeled, seeded and crushed
  • 3 cups water
  • 1 onion , chopped
  • 2 tablespoons cumin
  • 2 tablespoons black pepper
  • salt

Instructions

  1. In a large pot, place the pre-soaked white beans and cover with cold water about 4 inches (10 cm) above the level of the beans.
  2. Cook covered over high heat for 1 hour. The beans are completely cooked when they are tender.
  3. In another pot, place the lamb meat, cover it with cold water and cook on medium heat for 45 minutes.
  4. In a cast iron pot or Dutch oven, heat the oil and sauté the onion over low heat. Add the cooked and drained lamb, and brown for 3 to 4 minutes on all sides.
  5. Add 1 tablespoon salt, then add the cooked white beans and mix well.
  6. In a bowl, add the tomato paste, crushed tomatoes, and water and mix well.
  7. Add this mixture to the pot of lamb and white beans and season with pepper.
  8. Add the cumin, mix well and bring to a boil over high heat.
  9. Cook over medium heat for 15 minutes or until sauce thickens, then reduce heat and simmer for 45 minutes.
  10. Serve with basmati rice and a green salad.
