Marry Me Cookie Bars

Ingredients

  • 1 ½ cups rolled oats, divided
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 ¼ teaspoon ground cinnamon
  • 1 cup unsalted butter, room temperature
  • ¾ cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tablespoon milk
  • 1 tablespoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup white chocolate chips

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Line a 9x13-inch baking pan with parchment paper, spray with pan spray, and set aside.
  2. Pulse ¾ cup of the 1 ½ cups rolled oats, 3-4 times in the blender to break it up. In a medium bowl, whisk the pulsed oats, the remaining whole oats, 1 ½ cups all-purpose flour, ½ teaspoon baking powder, 1 teaspoon baking soda, ¾ teaspoon salt, and 1 ¼ teaspoon ground cinnamon. Set aside.
  3. In a separate large bowl, beat together 1 cup unsalted butter,¾ cup brown sugar, and ½ cup granulated sugar until combined and fluffy
  4. Add 2 large eggs, 1 tablespoon milk and 1 tablespoon vanilla extract and beat until pale and fluffy. Mix in the dry ingredients until just combined.
  5. Fold in 1 cup white chocolate chips and 1 cup semi-sweet chocolate chips by hand until evenly distributed in the dough.
  6. Spread the dough evenly in the prepared pan and bake for 25-30 minutes, until golden brown and a toothpick comes out clean from the center. If the top is turning too brown too quickly, carefully lay a sheet of nonstick foil right over the top of the pan (not touching the bars) to prevent further browning.
  7. Allow the cookie bars to cool completely before removing them from the pan and cutting them into pieces.
