- 1 tablespoon chopped fresh parsley
- ½ teaspoon dried Italian herbs or a mix of oregano, basil, and thyme
- salt and pepper to taste
- Optional: Red pepper flakes for a little heat
Instructions
- Prepare salmon: Pat the salmon fillets dry with paper towels. Season them with salt and pepper.
- Sear salmon: Heat the olive oil in a large skillet over medium-high heat. Place the salmon fillets skin-side down (if using skin-on fillets) in the skillet and sear for 3-4 minutes, until the skin is crispy and the salmon is browned. Flip the fillets and sear for another 2-3 minutes, or until cooked through. The internal temperature should reach 145°F (63°C). Remove the salmon from the skillet and set aside.
- Make the sauce: In the same skillet, add the chopped sun-dried tomatoes and minced garlic. Cook for 1 minute, until fragrant. Pour in the heavy cream and chicken broth (or white wine). Bring to a simmer and cook for 5-7 minutes, until the sauce has thickened slightly.
- Add Parmesan and herbs: Stir in the Parmesan cheese, parsley, Italian herbs, and red pepper flakes (if using). Season with salt and pepper to taste.
- Return salmon to skillet: Return the salmon fillets to the skillet and coat them with the sauce.
- Serve: Serve the Marry Me Salmon immediately, spooning the sauce over the salmon. Garnish with additional Parmesan cheese and fresh parsley, if desired.
