Marshmallow Buttercream Frosting
Description
Marshmallow Buttercream Frosting is made by gradually mixing confectioners' sugar with softened butter, marshmallow fluff, vanilla extract, and salt. Using a stand mixer or handheld electric mixer, the ingredients are combined at low speed before ramping up to high to ensure the sugar fully blends and air is whipped in. This process produces a fluffy and smooth frosting that is stable enough for piping and spreading onto baked goods.
The marshmallow fluff adds both sweetness and a unique marshmallow character, distinguishing this frosting from plain buttercream. The texture is creamy yet light, making it a pleasant complement to cakes, cupcakes, and brownies. The salt balances the sweetness slightly, enhancing overall flavor.
This frosting can be stored in an airtight container in the refrigerator for up to one month. Before using refrigerated frosting, bring it to room temperature and re-whip briefly if needed for best consistency.
Ingredients
- 7 cups confectioners' sugar
- 4 sticks 2 cups unsalted butter, room temp
- 3 cups marshmallow fluff or marshmallow creme
- 3 teaspoons vanilla extract
- ¼ teaspoon salt or to taste, fine
Instructions
- To the bowl of a stand mixer fitted with either the paddle or whisk attachment (or a handheld electric mixer**) add all the ingredients, begin mixing on low speed until the confectioners' sugar starts to combine.
- After about 1 minute of mixing, turn speed up to medium for 30 seconds and mix before turning it up tohigh.
- Allow the buttercream to mix on high speed for another 4 minutes.***
- After it's done whipping up, use to frost cake, cupcakes, brownies, etc. by either piping it, dolloping it on, or spreading it. Frosting may be stored airtight in the fridge for up to 1 month.
Notes
- For smooth frosting, sift confectioners' sugar if it is lumpy before mixing.
- While a stand mixer is ideal, a handheld electric mixer can be used; whipping time might be longer.
- Continue whipping for about 4 minutes to fully incorporate air and melt the sugar into the butter for better volume and consistency.
- Refrigerate leftover frosting in an airtight container for up to 1 month; re-whip briefly before use if chilled.
