Mashed Potato Pancakes (Crispy & Cheesy)

These savory mashed potatoes are made from leftover mashed potatoes, cheese, eggs, and flour. They have the best creamy and cheesy flavor!

Ingredients

  • 3 cups leftover mashed potatoes
  • 2 large eggs
  • 1 1/2 cups cheddar cheese grated
  • 1/2 cup all purpose flour
  • 1/2 cup oil for frying

Instructions

  1. In a large bowl, mix the mashed potatoes with eggs until well combined.
  2. Add in the cheese and flour. Stir the mixture together until perfectly smooth.
  3. Divide the mixture into 18 equal parts. Shape each part into a flat pancake shape. Preheat a pan with oil over medium heat. Cook pancakes until golden brown and crispy (about 3 minutes).
  4. Place the potato pancakes to rest on a plate lined with a paper towel. Serve with your favorite toppings and enjoy.
