These savory mashed potatoes are made from leftover mashed potatoes, cheese, eggs, and flour. They have the best creamy and cheesy flavor!

Ingredients
- 3 cups leftover mashed potatoes
- 2 large eggs
- 1 1/2 cups cheddar cheese grated
- 1/2 cup all purpose flour
- 1/2 cup oil for frying
Instructions
- In a large bowl, mix the mashed potatoes with eggs until well combined.
- Add in the cheese and flour. Stir the mixture together until perfectly smooth.
- Divide the mixture into 18 equal parts. Shape each part into a flat pancake shape. Preheat a pan with oil over medium heat. Cook pancakes until golden brown and crispy (about 3 minutes).
- Place the potato pancakes to rest on a plate lined with a paper towel. Serve with your favorite toppings and enjoy.
