Mashed Potato Quesadilla
This Mashed Potato Quesadilla recipe combines creamy mashed potatoes and melted cheese inside golden, crisped flour tortillas. The filling consists mainly of smooth mashed potatoes and mozzarella or your choice of shredded cheese. Cooking in a skillet crisps the tortilla edges while warming and binding the filling, resulting in a soft, cheesy center with a lightly crunchy exterior.
Ingredients
- 2 medium flour tortillas I am using Mission Flour Taco Tortillas
- 1 cup potato mashed
- 1 cup mozzarella cheese or Cheddar, Gouda, provolone; shredded
- basil to garnish
- sour cream optional, to serve
Instructions
- Spread half of the mashed potatoes onto one side of the tortilla. Sprinkle half of the cheese on top and fold the tortilla in half. Repeat this step to make another quesadilla.
- Place both of the quesadillas into a large skillet, and cook for about 2-3 minutes on each side, until the quesadillas look golden brown and crispy.
- Garnish with basil and serve with some sour cream. Enjoy!
