Mashed Potato Quesadilla
Description
Mashed Potato Quesadillas offer a comforting twist on the classic quesadilla by using mashed potatoes as the primary filling along with shredded cheese. The recipe uses medium flour tortillas filled with a generous layer of mashed potatoes and evenly distributed cheese, folded over and cooked in a skillet until the exterior is golden and crispy. This combination creates a satisfying texture contrast between the crunchy edges and the soft cheesy interior.
The cheeses suggested include mozzarella, cheddar, gouda, or provolone, providing flexibility in flavor profiles. Garnishing with basil adds a fresh note, and serving with sour cream offers a creamy, tangy complement to the savory quesadilla.
This dish works well as a snack or light meal and suits those seeking a filling, potato-based option with familiar quesadilla preparation. The layering and pan cooking are straightforward, making it accessible for home cooks.
