  • 2 medium flour tortillas I am using Mission Flour Taco Tortillas
  • 1 cup potato mashed
  • 1 cup mozzarella cheese or Cheddar, Gouda, provolone; shredded
  • basil to garnish
  • sour cream optional, to serve

Instructions

  1. Spread half of the mashed potatoes onto one side of the tortilla. Sprinkle half of the cheese on top and fold the tortilla in half. Repeat this step to make another quesadilla.
  2. Place both of the quesadillas into a large skillet, and cook for about 2-3 minutes on each side, until the quesadillas look golden brown and crispy.
  3. Garnish with basil and serve with some sour cream. Enjoy!
