Mashed Potato Rolls

These Mashed Potato Rolls are soft and fluffy dinner rolls that are made with seasoned mashed potatoes in the oven.

Ingredients

  • 2 1/2 tsp instant yeast
  • 3/4 cup water warm
  • 1/3 cup sugar
  • 2 large eggs
  • 2 tsp salt
  • 6 Tbsp butter softened
  • 1 cup mashed potatoes leftover
  • 4 1/4 cups flour

Instructions

  1. In a large bowl add your warm (not hot!) water, sugar, and yeast.
  2. Give the mix a little stir to combine.
  3. Let this mixture sit for 5-10 minutes just until the yeast blooms.
  4. Next add in your eggs, salt, butter, and mashed potatoes.
  5. Stir those together gently.
  6. Add in your flour and either use an electric mixer with a dough hook or just a wooden spoon to mix the dough until it just comes together.
  7. The dough will be wet dough.
  8. Cover the bowl lightly with a clean towel or plastic wrap.
  9. Set aside in a warm place for an hour and a half or until about doubled in size.
  10. I use a 1 ½ tablespoon cookie scoop to scoop out the dough and roll it into balls.
  11. I place 2 balls into each spot in a greased muffin tin.
  12. Repeat until all the dough is used.
  13. Cover again lightly.
  14. Let rise in a warm place for an hour and a half or until about doubled.
  15. Preheat your oven to 350 and bake for 20 minutes or until lightly golden and baked through.
  16. Cool slightly and serve!
