Mashed Potato Squash Recipe

Ingredients
- 1 mashed potato squash
- 1 teaspoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon butter
- ¼ cup milk
Instructions
- Slice the squash in half.
- Scoop out the seeds. Brush each half with the olive oil and sprinkle with salt and pepper.
- Bake in a 375 degree F oven for 45 minutes. Or air fry at 370 degrees F for 20 minutes. I usually put it cut side down in the oven and cut side up in the air fryer. But either way works!
- The squash is done when a fork goes in easily, and it starts to brown.
- Scrape out the squash and mash with the butter and milk. Taste it and add more salt and pepper if needed.

Notes
- Mashed potato squash isn't going to be available in all grocery stores. I have the best luck finding it at farm stands during the fall.
- Just like mashed potatoes, you can add some fun mix-ins. Try stirring in some grated Parmesan cheese, chopped fresh herbs, or even a spoonful of pesto for an extra burst of flavor. You could also add some crispy bacon bits or sautéed onions for a savory twist.
- If you are making this for a big dinner, you can roast and mash the squash ahead of time and reheat it in the microwave or on the stovetop.
