Mashed Potato Squash Recipe

Ingredients

  • 1 mashed potato squash
  • 1 teaspoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon butter
  • ¼ cup milk

Instructions

  1. Slice the squash in half.
  2. Scoop out the seeds. Brush each half with the olive oil and sprinkle with salt and pepper.
  3. Bake in a 375 degree F oven for 45 minutes. Or air fry at 370 degrees F for 20 minutes. I usually put it cut side down in the oven and cut side up in the air fryer. But either way works!
  4. The squash is done when a fork goes in easily, and it starts to brown.
  5. Scrape out the squash and mash with the butter and milk. Taste it and add more salt and pepper if needed.

Notes

  • Mashed potato squash isn't going to be available in all grocery stores. I have the best luck finding it at farm stands during the fall.
  • Just like mashed potatoes, you can add some fun mix-ins. Try stirring in some grated Parmesan cheese, chopped fresh herbs, or even a spoonful of pesto for an extra burst of flavor. You could also add some crispy bacon bits or sautéed onions for a savory twist.
  • If you are making this for a big dinner, you can roast and mash the squash ahead of time and reheat it in the microwave or on the stovetop.
