Mashed Sweet Potatoes

These mashed sweet potatoes are super creamy and easy to make with just 4 simple ingredients. It's the perfect side dish for fall dinners or the holiday meals.

Ingredients

  • 3 lbs medium sweet potatoes 4-5 medium sweet potatoes, peeled and chopped into 2-inch pieces
  • ½ cup regular milk or non-dairy milk plus more as needed
  • 3 Tablespoons butter vegan butter works too, plus more for topping
  • 1 teaspoon fine sea salt plus more to taste (I did 1 ½ tsp salt)
  • cracked black pepper to taste
  • 1-2 Tablespoons maple syrup or honey optional
  • 1 teaspoon cinnamon optional

Instructions

  1. Place chopped sweet potatoes in a large pot. Add enough water to cover the potatoes and heat until water is boiling. Reduce heat to medium-low, cover and simmer until the potatoes are fork-tender, about 15-20 minutes.
  2. Drain sweet potatoes and add back to pot or to a large mixing bowl.
  3. Add milk, butter and salt to the potatoes and mash using a potato masher until you reach your desired texture, adding more milk if needed. Alternatively, you can use an immersion blender or hand mixer.
  4. Stir in maple syrup and cinnamon if using.
  5. Taste and season with additional salt and freshly cracked pepper. Serve warm with butter.

Notes

  • Storing: If you have leftovers you can store the mashed sweet potatoes in an airtight container in the fridge for up to 4-5 days. They reheat beautifully. Just warm them up in the microwave or on the stovetop with a splash of milk to bring back that creamy texture.
