Mashed Sweet Potatoes

There's nothing like a side dish of mashed sweet potatoes sweetened with maple syrup. These creamy potatoes are perfect for holiday meals and weeknight suppers.

Ingredients

  • 2-3 pounds sweet potatoes
  • 1/4 cup half and half
  • 1/4 cup maple syrup
  • 2 tablespoons salted butter
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cinnamon

Instructions

  1. Fill a large saucepan with water and place on the stovetop over medium high heat to bring the water to a boil.
  2. Peel 2-3 pounds of sweet potatoes.
  3. Cut the potatoes in 1-1 1/2" chunks.
  4. Once the water is boiling, place the potato chunks in to cook.
  5. Boil for around 15 minutes or until the potatoes are fork-tender.
  6. Drain the water off the potatoes and place the potatoes in a large bowl.
  7. Add the half and half, syrup, butter and seasonings. Use a hand mixer or a potato masher to mash the potatoes.
  8. Serve warm.
