Mason Jar Waldorf Salad

A quick salad that you can prep ahead of time to grab and go!

Ingredients

  • 8 tbsp vegan mayonnaise
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 apples cored and chopped
  • 1/4 cup raisins
  • 2 cup celery thinly sliced
  • 2 cup chopped slightly toasted walnuts
  • lettuce

Instructions

  1. In a medium sized bowl, whisk together the mayonnaise with, lemon juice, salt and pepper. Set this aside if you're not serving right away or layer it into the bottom of your mason jar.
  2. In a mason jar, layer in the apple, celery, raisins, lettuce, and walnuts.
  3. Keep in the fridge if you are not serving right away. If you plan on making this more than 2 days in advance, be sure to keep your mayo on the side to avoid your salad from getting soggy.
