Matcha Bingsu (Green Tea Shaved Ice Dessert)

Matcha Bingsu is a delicate shaved ice dessert featuring ice infused with green tea powder, topped with chewy dango dumplings, sweet adzuki beans, and a drizzle of condensed milk. The dessert offers a refreshing texture and a mildly bitter, earthy matcha flavor balanced by the sweetness of the toppings and milk.

Ingredients

Matcha ice:
  • ¾ C water cooled to 80°C/176°F
  • 1-2 teaspoon matcha powder to your taste
Toppings:
  • dango chewy glutinous rice dumplings
  • adzuki beans red
  • condensed milk to your taste

Instructions

Make the matcha ice block:
    Cup of Yum
  1. Add matcha powder to a glass/jar/bowl.
  2. Pour the cooled boiled water over the matcha.
  3. Whisk the matcha until frothed.
  4. Let it cool.
  5. Transfer the cooled matcha to a freezer-safe container or ice molds (I used the molds that the ice shaver came with) and freeze until solid.
Shave the ice:
  1. Remove the frozen matcha block and let it sit at room temperature for about 10 minutes.
  2. Place the matcha ice block into the ice shaver.
  3. Shave the matcha ice into a chilled bowl, according to the ice shaver manufacturer's directions.
  4. Serve immediately with your choice of toppings and condensed milk.
