This cucumber matcha cocktail makes a great afternoon pick me up.

Ingredients
For the cucumber syrup
- ½ cup (100g) sugar
- ½ cup (125 ml) water
- 10 lices of cucumber
- 1¼ teaspoon matcha green tea
- 2 cups (500 ml) water
- ½ cup (125 ml) gin
- 4 tablespoons lime juice
For the Cucumber Matcha Cocktail
- 3 tablespoons cucumber syrup
- cucumber slices
- mint leaves
- 1/2 lime sliced
- Ice cubes
Instructions
Make the syrup:
- To make the cucumber syrup combine the sugar and water in a saucepan, and heat gently whilst stirring regularly until all sugar has dissolved. Then add in cucumber slices and leave them till the syrup cools completely. Discard the cucumber.
Make the Cucumber Matcha Cocktail:
- Add the matcha into a good sized bowl and slowly add 2 tablespoons of water, a little bit at a time, mixing constantly to make a smooth matcha paste. Then slowly mix in the rest of the water, followed by the gin, lime juice and cucumber syrup.
- Place some cucumber slices and mint leaves in each cocktail jar and mash with a wooden spoon. Then add in some lime slices and ice before topping up with the cucumber matcha cocktail.
Notes
- Chill Your Ingredients – Ensure your cucumber and matcha powder are chilled before use. This helps keep the cocktail refreshingly cool.
- Fine Strain – For a smooth cocktail, fine strain the mixture to remove cucumber bits or matcha clumps.
- Gentle Stirring – When mixing the cocktail, stir gently to combine flavors without breaking down the delicate cucumber slices. This helps maintain the cocktail’s crisp texture.
- Quality Matcha – Invest in good quality matcha powder for the best flavor. The better the matcha, the more vibrant and tasty your cocktail will be. You don’t need ceremonial-grade matcha for this recipe. The culinary grade matcha is perfect.
- Add a little water - First, add a little bit of water to the matcha to make a paste, before adding in the rest of the water to avoid ending up with clumps of matcha.
- Storage - The cucumber syrup can be stored in the refrigerator for about 1-2 weeks. You can keep the completed Matcha Cocktail in the refrigerator for 4-5 days.
