Matcha Pistachio Energy Balls
These energy balls combine cashews, pistachios, dates, shredded coconut, matcha powder, and coconut oil to create a flavorful, chewy snack. Rolling the formed balls in chopped pistachios adds a crunchy contrast. The recipe is natural and nutrient-dense, ideal for a quick energy boost or a convenient grab-and-go treat chilled from the refrigerator.
Ingredients
- ¾ cup cashew nuts raw
- ¼ cup pistachios raw shelled
- 12 date Medjool, pitted
- ¼ cup coconut unsweetened, shredded
- 2 teaspoons matcha powder
- 1 tablespoon coconut oil
- ¼ cup pistachio for rolling, roughly chopped
Instructions
- Blend. Place the cashews, pistachios, Medjool dates, shredded coconut, matcha, and coconut oil in a food processor. Process for one minute, or until finely chopped and blended.
- Scoop and make balls. Using a medium cookie scoop, scoop out balls of the mixture. Roll between your hands to create evenly sized balls.
- Roll in pistachios. When all the balls have been rolled, roll them again through the chopped pistachios and press firmly into the balls.
- Chill. Refrigerate for 15 minutes to firm up slightly, then enjoy!
Notes
- Store energy balls in an airtight container in the refrigerator for up to one week.
- Freeze them separated with parchment or wax paper to prevent sticking, and thaw in the fridge overnight before eating.
