Matcha Pistachio Energy Balls

These energy balls combine cashews, pistachios, dates, shredded coconut, matcha powder, and coconut oil to create a flavorful, chewy snack. Rolling the formed balls in chopped pistachios adds a crunchy contrast. The recipe is natural and nutrient-dense, ideal for a quick energy boost or a convenient grab-and-go treat chilled from the refrigerator.

Description

Matcha Pistachio Energy Balls blend raw cashew nuts, shelled pistachios, Medjool dates, unsweetened shredded coconut, matcha powder, and coconut oil into a smooth, sticky mixture that easily forms into bite-sized balls. Rolling the balls in chopped pistachios adds extra texture and nutty flavor. After shaping, chilling them in the fridge firms them up for perfect snack consistency.

The flavor is subtly sweet from dates and maple syrup, with a green tea earthiness from matcha balanced by the rich nuts and coconut. These no-bake energy balls offer a chewy yet slightly crunchy experience and can be kept refrigerated for up to a week or frozen for longer storage.

They are convenient for on-the-go snacking or a small pre- or post-workout energy boost, and the natural ingredients make them a wholesome option to have ready in the fridge or freezer.

Ingredients

Servings
  • ¾ cup cashew nuts raw
  • ¼ cup pistachios raw shelled
  • 12 date Medjool, pitted
  • ¼ cup coconut unsweetened, shredded
  • 2 teaspoons matcha powder
  • 1 tablespoon coconut oil
  • ¼ cup pistachio for rolling, roughly chopped

Instructions

  1. Blend. Place the cashews, pistachios, Medjool dates, shredded coconut, matcha, and coconut oil in a food processor. Process for one minute, or until finely chopped and blended.
  2. Scoop and make balls. Using a medium cookie scoop, scoop out balls of the mixture. Roll between your hands to create evenly sized balls.
  3. Roll in pistachios. When all the balls have been rolled, roll them again through the chopped pistachios and press firmly into the balls.
  4. Chill. Refrigerate for 15 minutes to firm up slightly, then enjoy!

Notes

  • Store energy balls in an airtight container in the refrigerator for up to one week.
  • Freeze them separated with parchment or wax paper to prevent sticking, and thaw in the fridge overnight before eating.
