Ingredients

  • 1/2 cup white whole wheat flour (60 grams)
  • 2 coops whey protein powder 64 grams, vanilla
  • 2 tbsp matcha powder (12 grams)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup applesauce 164 grams, unsweetened
  • 1/4 cup almond milk 2 oz, unsweetened vanilla
  • 2 tbsp butter 1 oz, unsalted, softened
  • 2 egg
  • 4 egg white
  • 1 tsp vanilla extract

Instructions

  1. Pre-heat waffle iron to medium heat (I set mine to about 4 1/2).
  2. Mix all dry ingredients, then add wet ingredients and stir until just combined.
  3. Spray waffle iron with non-stick cooking spray.  Pour 1/3 of waffle batter into waffle iron, flip waffle maker to other side and repeat.  Cook for about 4 minutes or until waffle is cooked through.  Repeat with final waffle.
  4. Serve waffles with whipped cream, maple syrup, and additional matcha powder dusted on top, if desired.
